In Mozilla Thunderbird, you could always set the option to request a "Return Receipt" whenever the party you are sending an email to is opened by them. Once that happens you're immediately emailed back that the party has received your email and has opened it up to read it.
The online email portals, e.g. yahoo.com and gmail.com, do not provide that option to you from what I have seen but you can set them up as a POP/IMAP email account so that you can download your email messages into your email program and work on them offline.
