Great question! I think we should always be at the ready with our "elevator pitch" because one never knows when someone make ask us or when the opportunity may present to share about SFI. Here is mine:

A good elevator pitch is a simple and concise information about your business or the company you represent.

You have to prepare what you are going to say well in advance because you have a very short time in which you are expected to leave an impact. What you say in those few seconds will determine whether a more detailed dialogue is possible later on.

Your pitch should certainly involve you introducing yourself and your business. (Your name and the name of the company) and could go along these lines:

It would depend how prepared the person is that you are talking to. Riding in an elevator is not a very long time to get to know a person's motivation or their preparedness to join SFI and be active. It may be better to have a chat with them and find out a a bit about them and then arrange to meet them at a later time to explain the business.

A good elevator pitch will be something that expreses high positive emotion that motivates some one to act.

Elevator pitch are short and to the point so it is important to prepare - not only by writing it down but be sure to verbally practice your pitch. Practice by yourself and in front of others.

The pitch is to fit the audience too - what may be a fit for those in an office building may not be the same pitch that you use when riding an elevator up to the top of a tall tower

I assume you do not literaly mean pitching people in elevators, but rather a short strong message.
It would be a bit scary if you start pitching somebody in an elevator - unless they ask you about your business.

There are so many selling points you can use. I believe you have to use what will appeal to your target market.

In my opinion elevator pitch means a very attractive highlighting point which we wish to say about. In this context it is SFI, as stated already in the question itself!
