What's the biggest turn-off that I should avoid talking about to prospects for SFI?

Besides for as is stated in SFI affiliate agreement point 7. “Affiliate agrees to present the SFI compensation Plan and SFI products and services as set forth at the official SFI Website. Affiliate will make no claims regarding potential income, earnings, products, or services beyond what is stated at the official SFI Website.”, you should tell them all there is to know about SFI.
Some people are turned off by the idea of MLM for instance, but if you’re not honest with them from the beginning they’re going to find out in any case.
So... point being... Just say it as it is from the beginning. You’re going to waste your own and your prospect’s time if you don’t.

What do you tell an affiliate who says he's going to quit because nothing is coming of his efforts and hard work?

If someone tells you that, it means their way of running their business is wrong.
Find out what it is they’re doing wrong and advise them accordingly. Check their VP ledger, find out where they’re advertising, etc. Tell them to follow your example and be sure to set the right example.
Point out to them that SFI isn’t a get rich quick scheme. Also point out that quitters aren’t winners and winners aren’t quitters.

Is it wise to offer non-SFI related incentives to my CSAs and PSAs? For example, create a standing order and get a free DVD?

I wouldn’t do that, except if it’s a eBook, or DVD on marketing, or advertising I.e... Here’s why.
SFI’s got many incentives available to pass on to your down line. Gift cards, PSA’s, etc. Rather use those.
I don’t see the point in rewarding someone with something that’s not SFI related. After all... You would want to reward someone with something that can help him grow in his SFI business, right?
