How do you motivate your team to get and stay active with SFI?

Good question, The very best way to motivate some one else is by example. Keep in contact and show them how you do it. If you are a good example your people will try to be like you and in most cases they will try to out do you. Offer a challenge to your affilites, see what I have done, now lets see you do better.
How can I find affiliates who are truly interested in SFI and who will remain active?

I would have to say the best way to find affiliates that are interested in SFI and who will stay for the long haul is by recruiting, recruiting, recruiting. The more you recruit the more likely your are to find those people. I do not think that anyone can look at a person and say that one will be a keeper, unless you are psychic.
Keep your options open and try to help as many as you can. The more you offer the opportunity the more likely you are to find the ones that will appreciate the offer and stay with it.

How do you handle being rejected over and over again when presenting the SFI opportunity to others?

Hi.
That is a good question and one that most people starting up have to face. The first thing you have to do is learn not to take the rejection personally. In 9 out of 10 instances the rejection is not that they are rejecting you , but the idea of starting out on something new. Most people are afraid of the new, and for them untried. It can be very scary, when you think about striking out on your own. So when some one tells you , I don't think so, leave the door open, give them your card, and ask them to think about it.
If you have explained that it is free to start, and there is all the training at hand and always some on to answer their questions, they probably will think about it. These days most everyone needs something to back up their income, and this is something that can be done in their spare time.

By sponsering many you will get a few that you can teach to copy what you do. Not everyone will be able to do this, there fore the more you have the better your chances.
